Dunkin’ Fudge Brownie

Yes Folks you read that right, Dunkin’ Fudge Brownie! I knew that Dunkin’ Donuts was rolling out a gluten free brownie, but it hadn’t made it to my local Dunkin’ yet. Just last week my mother and sister drove over to look for this elusive fudge brownie and sure enough they found it. Brooke’s, first thought was “This is the best brownie I have ever had!” I tried not being too insulted by that considering I have made her many brownies, but hey she’s entitled to her opinion. I tried the brownie the next day and I will say it was a very good brownie. To be honest I didn’t really know what to expect because I had never been to Dunkin’ before or ordered a bakery dessert item from a chain restaurant since being gluten free. I was very pleased, it was a delicious brownie and I would 100% order it again. The outside was baked well and the brownie itself was moist and chewy. I definitely recommend giving it a try if you haven’t yet. I hope this post finds you well and from my kitchen to yours, be well.

Mississippi Mud Pie

I would first like to start this off by wishing my Father a very happy birthday! This year he requested a Mississippi Mud Pie based off of a memory from his childhood. Of course I was all in to try something new, and an added bonus is that this dessert was made for chocoholics such as myself. I have never had a Mississippi Mud Pie before and can attest that this will be a make again recipe. We altered this recipe a bit to make it gluten free, but it was very simple to do so. The first change was using gluten free chocolate wafer cookies. There are a few different brands that my family likes to use: Mi-Del Sandwich cookies, KinniToos sandwich cookies by Kinnikinnick, or Glutino sandwich cookies. This time we used the Mi-Del sandwich cookies, but next time a recipe calls for chocolate sandwich cookies I will be trying out the new gluten free Oreos. To be honest I will probably purchase the GF Oreos once they are available in my local stores again before needing them in a recipe, so keep a lookout in the coming weeks for that post. Anyway, back to one of the best birthday treats I have had in a long time, the other alteration needed to be made was using an all-purpose gluten free flour blend for the brownie and pudding layers. This dessert was so delicious and decadent, truly the perfect way to celebrate life’s moments in 2021. Philly Cheesesteaks

What better way to kick off 2021 than with a brand new recipe of this classic favorite. I have only had one other Philly Cheesesteak sandwich and it was long ago before I was gluten free. My sister has never had one before and asked that we attempt to recreate it. As far as substitutions go we just used our favorite Against the Grain baguette cut in the desirable sandwich sizes. For the meat we used thinly sliced ribeye steak, one can also use a thinly sliced cut of flank steak. To top our sandwiches we used white cheddar cheese and provolone cheese; and as far as vegetables go, we used sauteed onions and green bell peppers. With the sandwiches we kept it simple and served french fries as the side. For christmas this year we hopped onto the bandwagon and got an airfryer. To answer your immediate question, yes it really is as good as people say it is. Recently we have been making our fries in there and they turn out great every time. Ringing in the New Year

Cheers to 2021 Everybody, here’s hoping that by the end of this year we may slowly start returning to a version of normalcy. Thank goodness cooking and baking remains relatively stable from one year to the next. I often find that many traditions, whether intentional or not, are very food focused. Now that the holiday season has come to a close that has become very evident to me. Regardless of your background or culture, traditions are a beautiful way to join together in celebration and share in jubilation. As I mentioned above, the core of these events is food; food has a wondrous power to bring people together in joyful memories. Try for a moment thinking of some of your favorite memories of 2020, I know there might not be many, but think about where you were and who you were surrounded by. Some of my most fond memories from 202o were in the kitchen with my family or roommates, having frosting battles or experimenting with new recipes. It truly is the little things that can bring joy and light to unexpected circumstances. I hope that you were able to think of a memory that made you smile. Looking back I have appreciated my family’s traditions more than usual this past year, I think this is largely because they were a source of stability. The end of the year proved challenging, consistent with the rest of 2020. I have felt bad for having so few posts this month, but my hope was that many of you were enjoying the holidays and time with your loved ones. Final exams wrapped up about the second week of december, and consequently I returned home for the holidays. Before the festivities could begin I did have to undergo a minor surgery on my hand which slightly inhibited my ability to type the past few weeks. Now it is healed enough to type so I can finally update you all, and get going on some new recipes for the new year. Who knows maybe 2021 will bring new traditions or perhaps some new make again meals. I wish you all the very best and will be back with some great gluten free updates soon.
